PERPINDAHAN MASSA GAS –CAIR DALAM PROSES FERMENTASI ASAM SITRAT DENGAN BIOREAKTOR BERGELEMBUNG

Proses fermentasi asam sitrat dapat dilangsungkan dalam fase cair. Proses fermentasi ini berlangsung secara aerob, sehingga keberadaan oksigen dalam fase cair sangat menentukan keberhasilan proses fermentasi. Penelitian ini bertujuan untuk mempelajari proses perpindahan massa gas-cair dalam proses fermentasi asam sitrat, dengan variabel yang dipelajari adalah konsentrasi jamur dan laju alir udara. Penelitian dilakukan pada suhu kamar 30 o dan tekanan 1 atm. Laju volumetrik udara divariasi pada rentang 27.4 – 58.07 cc/detik, dan konsentrasi jamur Aspergillus niger 10 x 106 dan 20 x 106 spora. Pegukuran perpindahan massa dengan metode dinamik, yaitu dengan mengukur konsentrasi oksigen terlarut dengan DO meter setiap detik secara langsung. Hasil penelitian menunjukkan bahwa kenaikan konsentrasi awal kapang akan mengakibatkan penurunan koefisien transfer massa. Peningkatan laju alir udara akan meningkatkan koefisien transfer massa. Hubungan konstanta perpindahan massa terhadap laju alir volumetrik udara pada fermentasi asam sitrat diperoleh persamaa kLa = 8.0031.Vg0.698. Pada penelitian yang dilakukan Shah et al., 1982 diperoleh hubungan : kLa = 0.467.Vg0.82.Kata kunci: bioreaktor bergelembung, proses perpindahan massa, konsentrasi jamur, laju alir dan konstanta perpindahan massa
